Smokin' Cheddar BBQ Beef Fingers wins Beef Cook-Off

Bev Schuele of Cedar Rapids took home the winning honors from the 2007 River City Roundup "What's For Dinner Beef Cook-Off" for her Smokin' Cheddar BBQ Beef Fingers.

In this case it wasn't only an honor to win, but she took home a set of new Frigidaire appliances from the Nebraska Furniture Mart. A refrigerator, range, dishwasher and microwave are all hers, thanks to this winning recipe.

Smokin' Cheddar BBQ Beef Fingers are a deliciously simple creation of beef cube steaks breaded in Smokin' Cheddar Doritos, lightly fried then baked off, and dipped into your favorite dipping sauces.

"They are so easy to make, I almost feel guilty," Schuele said. When it comes to too easy, there is no such thing with this contest as the two basic rules surrounding the contest are that contestants must submit recipes that can be prepared in 45 minutes or less with 8 ingredients or less.

The five finalists' entries involved in the contest were judged on taste, ease of preparation and appearance. Each contestant prepared their dish on the "What's for Dinner Cooking Stage," sponsored by the Nebraska Beef Council.

Beef certificate prizes were also awarded to the other finalist contestants in this year's contest: Karen Hall of Elm Creek, Lori Balke of Beatrice, Katie Becker of Lincoln and Kelli Burkey of Hebron.

All of the winning recipes are posted on the Nebraska Beef Council's Web site at nebeef.org. The contest was sponsored by the Nebraska Beef Council and the Nebraska Furniture Mart.
